Unlike a handi — deep and round-bottomed for liquid-heavy cooking — the Lagaan's wide base maximises heat contact, ideal for biryani, dum cooking, halwa, pulao, and slow-cooked curries. Unlike a kadhai's high, curved sides, the Lagaan's low, straight sides allow steam to circulate and settle back into the food.
